That serene sea of green is busily harvesting sunlight and converting (photosynthesis) it to energy for use by the trees. Early maturing varieties like Pawnee are harvested in October. By mid-December the harvest is complete. The pecans are gathered, cleaned, shelled, hand graded, and packed into one pound heat sealed freezer ready bags. They are immediately refrigerated for shipment to customers. Shelled pecans can be kept in the refrigerator for about nine months and for up to two years in the freezer.
Pecans can be thawed and refrozen repeatedly during the two-year freezing period without loss of flavor or texture.
Heat sealed polypropylene bags is best for storing pecans in the freezer. Sealed freezer bags also provide satisfactory results.
After removal from freezer, pecans will retain high quality for an additional two months when properly stored in the refrigerator.
In-shell pecans can be stored in a consistently dry area at aout 35 degrees for six to 12 months with minimal loss of quality.
